Buttermilk Biscuits

I love a good biscuit. Tall, golden, crusty, and warm. AudioDad loves them too and can usually polish off a whole batch. He's got some competition now that Munch has discovered them. Her favorite part is that I let her put the jelly on all by herself.


Buttermilk biscuits
2 c. flour
1/2 tsp. salt
2 tsp. baking powder
1/2 tsp. baking soda
1 tbs. sugar
1/2 c. vegetable shortening (Crisco)
2/3 c. buttermilk

Preheat oven to 425 degrees. Combine the flour, salt, baking powder, baking soda, and sugar in a bowl. Use a pastry blender to cut the shortening into the dry ingredients until the mixture resembles coarse meal. Add the buttermilk and stir with a fork until the dough comes together. Turn the dough onto a lightly floured board and knead several times. Pat the dough out until it's about 1/2 inch thick, then cut into rounds using a floured cutter. Place biscuits, with the edges touching, on a parchment lined baking sheet and bake for 15-20 minutes.

I've been so focused on my upcoming summer vacation with Munch. Most of my time has been spent researching fun and educational things to do with her. Here are seven Awe-summm bloggers I've recently discovered who are getting me inspired and excited:

5. I'm a pretty easy-going person, except when I'm not :)
6. I have a LOT of patience.
7. I adore being Munch's mommy.

Mommy's Little Helper

No, I'm not talking about a special little happy pill...it's Munch doing her chores- we seem to have found a pretty good routine. I cook, Munch clears the dishes, wipes down the table with baby wipes, and sweeps crumbs with her little dustpan and sweeper, and AudioDad does the dishes.

Rock Star

This pic is pre-haircut, but I never got around to sharing it with you. Munch's tastes in music run fairly current because of what I've got on the radio and also pretty eclectic due to what her daddy plays for her. I usually try to censor what she hears in the car if I hear inappropriate language coming up in a song, but commutes are such nice space-out times that I often get lazy and just leave the cycling news/traffic/weather station on. So I was baffled when she started asking for the "Rock Star" song. I had no idea what it was until P!nk's "So What" came on and she started singing along. Na na na na na na na Na na na na na na...

New Bed

We finally got our act together and purchased the twin-size bed that was supposed to be Munch's birthday present back in January. Munch and I headed to Target and picked up some "beautiful, beautiful" Princess sheets. Here she is waking up for the last time in her toddler bed-

Once I got the sheets on it, she couldn't even wait for me to put the shams on. Munch climbed in right away-

and with all the pillows on it, it's a perfect spot for all of us to share a good book!
